Old Sauvignon blanc vines specially selected, intercellular short time fermented in amphoras and stored for 16 month on the lees without interventions. Malolactic fermentation.
The Numen Fumé blanc from Johannes Zillinger is an unfiltered, bit cloudy sauvignon blanc. Old vines, intercellular fermentation in Georgian qvevris and 16 months on the lees: a long and elaborated process that results into a super complex white with beautiful minerality and a very long finish. Floral and elegant with lots of peach notes as well as litchi and jasmine.
