80% whole cluster pressed + 20% intercellular fermented in 500 lt amphoras (5 days) | slowly pressed | stored and matured in 3 old champagne barrels | aged for 12 month under Flor.
Malolactic Fermentation.
The Sauvignon Blanc vines were re crafted on the coldest part of the Riesling vineyard in Steinthal. Resulting in extremely small berries, concentrated and very ripe with a reduced sugar content and high acidity.
This special wine is extremely complex, lots of elegant flavours that dance on your palate with a beautiful saltiness. Quince, baked apple, cinnamon, lime and hazelnut. Expect a light oxidative note that brings the wine to the next level! Top!
