Chardonnay: ~10 days of skin fermentation in 1000 lt amphoras; pressed and stored again in the amphoras
Scheurebe 2017-2022: fermentation start on the skins; finished fermentation and stored in 600 lt barrels of acacia and oak
Riesling 2013-2022: solera system in 600 lt barrels and stainless stee
The Revolution White from Johannes Zillinger is an experimental mix of 3 grape varieties: Chardonnay (50%), Riesling (25%) and Sämling (25%). The story doesn’t end here though. The Chardonnay was fermented in amphora, The Sämling in barrels and the Riesling was made with a unique solera system (different vintages put together year after year). Slightly fizzy at first, it has a citrusy, refreshing and balanced style. Notes of grapefruit, lime, clementine and green apple.
